{"id":150,"date":"2008-09-20T15:08:00","date_gmt":"2008-09-20T19:08:00","guid":{"rendered":"http:\/\/www.orchardhillfarm.ca\/?p=150"},"modified":"2008-09-20T15:08:00","modified_gmt":"2008-09-20T19:08:00","slug":"winter-warmer-soup","status":"publish","type":"post","link":"http:\/\/www.orchardhillfarm.ca\/?p=150","title":{"rendered":"Winter Warmer Soup"},"content":{"rendered":"<p><strong>Winter Warmer Soup  <\/strong>from<em> The Complete Encyclopedia of Vegetables and Vegetarian<\/em> cooking by Roz Denny and Christine Ingram<br \/><strong><\/strong><br \/>3 medium carrots, chopped<br \/>1 large onion, chopped<br \/>1 large <span class=\"blsp-spelling-corrected\" id=\"SPELLING_ERROR_0\">potato<\/span>, chopped<br \/>1 large parsnip, chopped<br \/>1 large rutabaga, chopped<br \/>2 tbsp vegetable oil<br \/>2 tbsp butter<br \/>salt and ground pepper<br \/>1 piece fresh ginger, grated<br \/>1 1\/4 cups milk<br \/>3 tbsp cream<br \/>2 tbsp dill<br \/>fresh lemon<\/p>\n<p>1 Put the carrots, potato, parsnip, turnip and onion into a large saucepan with the oil and butter.  Fry lightly, then cover and sweat the v<span class=\"blsp-spelling-error\" id=\"SPELLING_ERROR_1\">egetables<\/span> on a very low heat for 15 minutes, <span class=\"blsp-spelling-corrected\" id=\"SPELLING_ERROR_2\">shaking<\/span> the pan occasionally.<\/p>\n<p>2 Pour in the water, bring to a boil and season well.  Cover and simmer for 20 minutes until the vegetables are soft.<\/p>\n<p>3 Strain the vegetables, reserving the stock, add the ginger and puree in a food processor or blender until smooth.<\/p>\n<p>4 <span class=\"blsp-spelling-corrected\" id=\"SPELLING_ERROR_3\">Return<\/span> the puree and stock  to the pan. Add the milk and stir while the soup gently reheats.<\/p>\n<p>5 Remove from the heat, stir in the cream, dill, lemon juice and extra seasoning, if necessary.
